Key Responsibilities
- Carry out culinary production in the assigned station following company recipes and specifications, under the guidance of the Sous Chef or Chef de Partie.
- Adhere to the daily production schedule as directed, considering the itinerary and outlet requirements.
- Maintain organized and accurate recipe files for your section.
- Seek guidance from senior chefs to ensure quality and consistency.
- Monitor ingredient consumption and notify supervisors of any fluctuations.
- Coach subordinates in menu knowledge, production skills, and culinary techniques.
- Ensure compliance with safety, environmental, USPH, and fleet regulations.
- Assist in training new galley staff as directed.
- Follow USPH standards and practices to minimize food waste.
- Handle materials carefully to prevent waste and monitor staff compliance.
Skills, Knowledge & Expertise
- Formal culinary qualification from a recognized institution.
- Minimum 4 years in large-scale culinary environments, with at least 1 year as Demi Chef de Partie.
- Knowledge of Western cuisines and sanitation regulations.
- Ability to train and motivate team members.
- Proficiency in English, both verbal and written.
- Strong communication and interpersonal skills.
- Ability to work effectively in a diverse, multicultural environment.
